Pink Borbon is a rare and beloved variety born in the hills of Huila, Colombia—a natural cross between Red and Yellow Bourbon. Known for its resilience and vibrant flavor profile, this coffee thrives in Huila’s rich volcanic soil and diverse microclimates. With notes of sweet caramel, florals, and tropical fruit, it has become a favorite among local farmers.

Carefully grown by Edier Perdomo and Diego Horta, this lot undergoes a 24-hour cherry pre-fermentation, followed by a 36-hour anaerobic fermentation in mucilage. Afterward, it’s sun-dried on raised beds for 15 days. The result is a semi-washed coffee with a lively and layered profile—think citric acidity, floral notes, green apple, green tea, and tangerine.
