This lot of coffee is a multi-producer lot from a comité of twelve small farms around the village of San Antonio de Chingma in Huabal, Peru. Since each farm is only about 1-3 hectares, the producers combine their output to make a larger lot of coffee that represents their area. It's a very communal process - many of the producers share processing equipment and help one another harvest cherry, and the entire comité shares tips on technique to improve coffee quality year-over-year so that the lot fetches higher premiums.
There's a lot of coffee plant diversity in Peru, and this lot is indicative of that with a mix of Pache, Caturra, Bourbon, and Typica. Add in that some farmers in this lot have different washing & fermentation techniques, and you're in for a complex coffee with a very exciting flavor profile. We're getting a great juicy grape note, with some sugary sweetness and a backbone of rich chocolate. It's a coffee with tastes that will satisfy almost any type of coffee fan - a great all-rounder that we hope you'll enjoy again and again. Cheers!

With a touch of bright and tart acidity, a pervasive sweetness, and a foundation of toasted malt, Agua Azul does indeed offer something for everyone. Fairly complex and very well-balanced.

What a great cup of coffee. For beans that have been combined across a grower cooperative, but still single-origin, surprisingly subtle and complementary flavors. No loss of tartness or acidity to add complexity, with subtly (and not overwhelmingly) sweet flavors and balance throughout. Definitely taste the lingering maltiness, which gives additional complexity. Very complex and satisfying. Seems to get better with every sip.

This is hands-down the lightest roast coffee I've ever had before...and it is now the best I've ever tasted. I was a little skeptical of how light (even being a fan of light roasts), but it seems to bring out the most incredible milk chocolate notes, with grape/plum almost tea-like body qualities. It's delicate and 'light' from a mouthfeel perspective (but might be due to my aeropress method), but it is sweet, subtle, pleasant - but don't let that misconstrue how deep and complex this is. Like most other coffees, this one seems to get more sweet, bright, and chocolatey as it cools. It has completely changed my perspective (previously not a fan) of central/south american coffees, and I can't wait to get another super-light roast like this. Thanks Moustache team!

I often prefer a brighter acidity, but this was so well balanced. It had smoothness and depth and just enough brightness to keep the cup active. This was a great sitting in the backyard in the morning brew.

Although I didn't notice anything spectacular up front, this roast was still wonderfully complex, with a nice chocolate finish, beautifully balanced. After tasting a cup (made with an AeroPress on a recent camping trip), even with the beans ground a day before, my son raved about it. The AeroPress really ramps down the acidity, but still makes a delightful cup of joe. No matter how you brew your coffee, Moustache always impresses.

This cup is very smooth. The grape and chocolate combination is well balanced. I brewed this using the Hoffman V60 method. Found that it's best at a water temp of around 209F.
