Aprocassi is a grower’s cooperative based in the La Coipa area of Cajamarca, Peru that was initially founded in 2000. At the time, mining interests were rapidly moving into the area to take advantage of the region’s gold and silver deposits - so the local farmers decided to band together to better protect their interests and advocate for responsible environmental stewardship. The coop is now one of the most established and respected coops in the region with over 490 active members and receiving stations in both Jaen and San Ignacio where members deliver their coffees and receive agricultural support and member resources.

We’re loving this lot from Aprocassi - it’s bright and zippy, with great structure and sweetness. The main flavor notes we’re tasting are juicy cherry and crisp red apple, along with a some of that cane-sugar sweetness that the best South American coffees can produce. It’s a coffee that’s lively and fun, which should be a blast to brew on a few different devices to really tease out the different notes. Enjoy!

Balanced but a little boring.

The flavor profile seems balanced, but it's a little too subtle for my equipment and technique to bring out, and nothing that I'm a huge fan of sticks out. There's definitely some interesting sweetness in there; Other than that, not picking up anything remarkably good or bad.

Lively and interesting

For me, Aprocassi is bright and fragrant while remaining fairly robust and grounded. A wonderful yin-yang combination that kept me coming back for more. A burst of sweetness upfront, with a little acidity, mellowing into a well-structured underlying roast of cocoa. Nothing at all like an espresso roast for me. Recommended.

Enjoyed this one!

This was a pleasing cuppa. I've been enjoying it half & half with Crio Bru brewed cacao, and it blends well with that.

Aprocassi excellent !!!

This is one of my two favorites thus far. It has a very bright fresh flavor with no bitter after taste. Like El Limonar it tastes rich. I grind one tablespoon and a half. I would say it is complex. Like El Limonar you can't help taking more than one gulp. If this makes any sense it tastes like a food that is good for you.Fruit and chocolate? And a fresh coffee bean flavor. Very nice picture of the gang ...
