This delicious coffee comes to us from small-holder producers who live in and around the town of Chelbesa in the Gedeb woreda. If you aren't brushed up on Ethiopian geography - don't worry! Ethiopia is structured into 12 ethno-linguistically based regions and city-states called kililoch. These are broken up into zones, which are collections of smaller districts called woredas. Specialty coffees from Ethiopia are often refered to by the woreda where they grew. For example, Gedeb (where this coffee is from) and Yirgachefe are both woredas in the Gedeo zone. (In terms of heirarchy, a woreda is a third order district - sort of like a municipality that is within a county in the USA). It can be hard to keep track of - but some woredas famously put out incredible coffees like this one!
Geography aside - this coffee tastes fantastic. Washed and dried on raised beds for 20 days - we're picking up on some real smooth notes from this lot. An orange note lends the cup a bit of citrus acidity - but the overwhelming character of this coffee is mellow and rich with tastes of chocolate and caramel taking the lead. It's the perfect coffee for slow sipping on a quiet morning, the kind of coffee that's best enjoyed slowly. Even if it's in your to-go mug - take a few moments and pause with this cup, we think it'll reward the extra attention.

An overall mellow, balanced cup. I pick up on the chocolate and also a bit of nuttiness on the back end. Very pleasurable for a washed varietal!

Of all the Ethiopian coffees that came our way of late this one seems the least flavorful. A good coffee just not a wow I need to order another bag before it's gone.

My first coffee from Moustache, but just, wow. An adventurous Ethiopian. It's extremely fragrant — when I first opened the whole room was filled with butterscotch caramel smell (which is surprisingly not as heavy in the taste), then when I grind it, it had some floral spices come out of it. Not extremely unconventional, but your interesting comfortable morning coffee... it takes you places, ya know? And the feel on the mouth was chocolate creaminess, and mellow citrus. As it cools down it gets sweeter. Loving it.

I'm not as sophisticated in evaluating coffee as some other users. However, I know what I like and this might be my favorite morning coffee. I tend to favor peaberry coffees and Vienna roasts. I don't find as many of those as I used to. I would definitely put this one on rotation.
