Chirosos de San Carlos — Colombia, Antioquia

From the picturesque Penderisco River valley of Urrao, this exceptional lot showcases the unique character of the Chiroso variety. Grown at 1,800 meters, this coffee represents the collaborative efforts of 10 dedicated producers who are pushing the boundaries of quality in this emerging specialty coffee region.

The cup profile delivers a refined sweetness with notes of chocolate and caramel, balanced by bright citrus acidity and complex tropical fruit undertones. The careful processing includes a 12-hour aerobic pre-fermentation followed by a 36-hour anaerobic fermentation, developing deep complexity while preserving the variety's distinctive characteristics.

More than just exceptional coffee, this project represents a commitment to education and sustainability, ensuring better opportunities for Urrao's farming families through direct trade relationships and improved processing techniques.
