This dynamite lot of coffee is from our friend Juan Saldarriaga in Antioquia, who's been producing exemplary coffees in the region since he took over management of his family's two farms in 2012. This particular lot is especially unique due to its processing: you don't see too many high-quality naturals coming from Antioquia because the humidity can make processing difficult. Mr. Saldarriaga has circumvented this problem with technology - investing in a machine called a cold-dryer that he uses to process natural coffees. This machine allows him to control humidity, airflow, and temperature via software - allowing him to fine-tune the drying profile of his natural coffees to achieve superb quality and flavor. It's an innovative use of the machine, and one that we're excited to see more of in the future.
Whether it's the beans or the drying - we know one thing for sure: this coffee is incredibly sweet and distinctive! The profile is packed full of bright, acidic flavors reminiscent of all your favorite tropical fruits. There's a smooth pear note that we were surprised to pick up, but on the whole this coffee is candy-sweet from start to finish and is sure to please natural-processed devotees and newcomers alike. With such a bold and unique profile, this is the sort of coffee that will leave a lasting impression - so get ready for some brews to remember!

Although I'm enjoying the sweetness and smoothness of the El Canto #2 coffee, I'm not sure it would be everybody's choice. I'll be ready for something else in a couple of weeks, but that's what's nice about the club: the coffees are always different.

The brightness of this batch is off the charts, as soon as opening the bag of beans all the way through brewing. I did have a bit of trouble grinding fine enough for the resulting cups to feel underextracted, but in the end it's a super sunny way to start the day. Coffees like this give me enough reason to drink single-origin on flavor alone.

Had to brew a smaller cup of this in the morning than usual, it's quite acidic. But also very flavorful.

This Columbian tastes good, particularly if you like your coffee sweet. I don’t mind sweet but my preference runs to African and Far Eastern beans. I received El Encanto back to back, first time this happened as a subscriber. I recommend Moustache to any discerning drinker.

This is a light, sweet, and thin coffee. The taste is sort of intriguing at first but it doesn’t have that coffee taste that I’m use to. I have tried 2 cups now, one hot and one cold, this just isn’t for me.

Not bad and definitely has that unexpected sweetness to it that some will like. Not too acidic but close. This might be a good gateway blend for some who are intimidated by overly dark coffees

If you enjoy fruit forward flavors, this is one you should try. I’m yes, all coffee smells amazing, but the tropical fruit flavors are present the moment you open the beans. The best part...it’s great until the last drop!

I really enjoyed this coffee. I have tried making this coffee 3 ways. I tried it in the french press and it wasn't the greatest and didn't have much body. This coffee was excellent as a pour over with really nice aroma and very nicely balanced, but with strong fruit notes. Surprisingly the coffee was delicious made on the espresso machine as a breve latte. It goes great with cream and my friend and I picked up banana type notes. The natural process characteristics of this coffee are really great!

This coffee was a bit more full bodied than others which was a nice change of pace for me. El Limonar is still my past favorite. It had a brightness and complexity to it. This coffee has more body but not acidic. I think I am not one for acid coffee while I see others like that jolt. El Encanto 2 was great.
