This week's coffee is an amazing crop out of the Antigua region of Guatemala, grown on the La Esperanza farm. These beans stood out because of their sweet, bright flavor profile and citrus-like acidity, which is due in part to the Villa Sarchi varietal. Villa Sarchi is a natural, spontaneous mutation of the Bourbon varietal, now found widely across South America. In this particular batch, a balance of Bourbon & Villa Sarchi plants growing together on the same lot produce a coffee bursting with fruit flavors and just the right level of tartness. This is one Guatemalan coffee you won't want to miss!
