This lot of catuai coffee comes to us from one of the farms managed by Marysabel Caballero, an excellent coffee producer in Honduras. Her father taught her the trade, and she now manages several farms with her husband Moises. The family also owns a central mill, where they process all their coffees to exacting standards. They utilize modern equipment which allows them to produce washed coffees with much less water than traditional practices, a great way to introduce sustainability to every step of the coffee process. Their focus on specialty grade coffee and quality processing has led to some incredibly tasty coffees and recognition nationally within Honduras.

La Matilda is a wonderfully smooth lot that has some fruit flavor without an overpowering acidity. We taste notes of raspberry and violet, along with a smooth cane sugar sweetness. We love how relaxed and easy this coffee is, and we hope you get a chance to relax and enjoy it as well!

Okay, but nothing I'd buy again

I've tried this coffee as both drip and French press, and it just doesn't work for me. It might help if I had any point of reference for "violet" as a flavor, but I doubt it. I am very fond of raspberries, though, and if there's anything of raspberry in this coffee (except maybe its acidity), it's lost on me. I actually get something more like mango or guava from the coffee's aroma. Overall, it seems to veer more toward tangy than sweet, but not in any sort of assertive way. It just tastes kinda meh to me.

Smooth to a fault

Very smooth coffee, drinkable. But it seems to lack a little personality and come off as a little bland. Needs a little more punch

Slightly Sweet

I really enjoyed this coffee. I found that it has a slightly sweet taste. I do, however, agree with those saying it was a bit bland. It reminded me more of the flavor one would get with tea, not with coffee. But still, I found it to be an enjoyable cup of coffee.
