Olga Leticia Cabrera has been solely focused on specialty coffee for the past three years, but is a second generation coffee producer. The 3.5 hectare farm is called finca Las Mandarinas and is located at 1700 meters above sea level. Olga believes in picking the coffee cherry at peak ripeness, then depulped the same day. For processing, the beans are fermented for 24 hours, then washed with clean water and dried for 20 days. Since focusing on specialty coffee, Olga has been able to improve the quality of life for her family and employees of the farm.
We are really noticing complex deep flavors of red grape and plum. There is also a current of bright raspberry tartness that shines throughout. Looking forward to brewing this one, cheers!

MC sent me this coffee and it has a beatiful, lemongrass tea flavor, and tangerine acidity, but the fruit notes are so settle, i found some peanut and raisin notes, that are related with roasting development. This is a coffee for the afternoon/evening hours, and I recommend with methods like Kalitha, Switch or Stagg, for avoid those flavour notes, because you can change time of the pour over. It is decent. Cheers!

I do taste the raspberry and plum notes, enjoying this in the morning and for my afternoon cup. Balanced and reliable, enjoying having it in my rotation!

I haven't been able to extract the fruit notes yet, which is a shame as I prefer stonefruit to the chocolate I'm getting out now. However, the classic notes are well-balanced and have good body behind them; I suspect I need to keep tweaking extraction.
