The Ruthaka Farmers Cooperative Society (FCS) is located in Nyeri in Central Kenya. Nyeri is located on the slopes of Mount Kenya, and together with the neighboring region Kirinyaga, is known for its intense, complex, and flavor-dense coffees. The FCS is made up of mainly smallholder farms, each with some 100 trees. They are organized in Cooperative Societies that act as umbrella organizations for the factories where the smallholders deliver their coffee cherries for processing. The coffee is fermented for 16-24 hours under closed shade. After fermentation the coffees are washed and again graded by density in washing channels and are then soaked under clean water from the Gatomboya stream for 16-18 hours.
This is a fantastic cup–we are tasting notes of sweet cherries, red berries and fruity IPA. Yes, to all of that--let’s brew!
