This rare varietal is a hybridization of red and yellow Bourbon that is unique to Colombia. Since the gene that expresses the pink color is recessive it's very easily overpowered by red and yellow genes, which means that producing Pink Bourbon usually involves isolating the crop to its own lot away from any other crops. Picking Pink Bourbon coffee can be difficult, as the unusual cherry color makes it harder to tell when cherries are fully ripe. There are only a handful of producers that put in the effort to cultivate this rare crop at scale, but its popularity is growing and we're excited to see more Pink Bourbon in the works throughout Colombia - because the flavors we've been getting out of this cup are fantastic.

This lot of washed Pink Bourbon from Jose Sanchez' Finca San Martin brews a bright, effervescent flavor profile. A slightly tart note of apple gives the coffee a bit of edge, while a juicy peach note fills out the majority of the profile with sweetness and depth. We couldn't help but notice the aromatics of this cup as well, which present as delicate florals reminiscent of a subtle perfume or cherry blossoms. Altogether, this is a decadent coffee with a great mix of sweetness and subtlety that's sure to leave an impression. Really glad I tried this!

I seem to prefer the overall flavor profiles of the Central/South American coffees I've received to the Ethiopian ones. San Martin Pink Bourbon is pleasantly rich but not overpowering. I'm a coffee heretic who doesn't drink it black, and I like the flavor to hold up well to some half-and-half and a pinch of sweetener--this one does.

Oh... so sweet.

This coffee was the perfect mix of tart acidity and a well balanced and rich cup of sweet coffee. I've always found myself seeking out Pink Bourbon variety coffee whenever I have the opportunity, and this did not disappoint.
