This delicious natural-processed coffee was grown by small-holder farmers in and around the town of Bombe in Sidama, Ethiopia. Most farmers in the town don't grow enough coffee on their own to export, so they bring their cherry to a communal processing station that buys it, sorts it, and produces different lots of coffee that represent the area. In this case, the Ayla washing station processed this lot by drying the coffee cherries whole instead of removing the skin and fruit of the cherry. Natural processing can be tricky to manage, but when done properly, the results are outstanding.

This lot was definitely processed properly, as the wild flavors confirm! We're tasting bright spikes of passionfruit alongside a sweet berry note. We're also getting some subtle vanilla tones and a dense, creamy body that makes this brew a particularly enjoyable multi-sensory experience. Natural for people who don't like naturals?

I am a big fan of naturally processed coffees but this one is unusual in a normal sort of way. It's a much more balanced sort of coffee. It still has some interesting bright fruit flavors more typical of naturals but with a smooth backbone sort of under-structures the coffee with a really nice full flavor. A really nice coffee.

Delicious, dark and dense, with a clear hit of fruit and that perfume-like pungency that Ethiopian coffees bring.
