Capadocia is a farm in Sul de Minas, Brazil owned and operated by Augusto Ferreira & his wife Patricia. I (Sean) had the pleasure of visiting with them when I visited Brazil in 2019 (back in the pre-covid era), you can read more about it here . They are both under 30, but with 4 generations of coffee-producing heritage at their disposal - their relatively young farm is putting out some stellar coffees. They produce mainly red and yellow Catuai - and process everything on their farm naturally, drying the coffees on concrete patios and raised beds in partial shade.
Most naturals are notable for their more intense flavors, but this particular lot gives us a richer, smoother profile with a solid chocolatey base. We're picking up on a coconut-like creaminess and some nutty, almond-like tones that make for a smooth sipping cup of coffee. We're really impressed by the Ferreira's quality output for such young producers, and we wish them more success in future harvests!

First order from this coffee club. Had to do a little research to determine what brewing parameters would help bring out the best taste. Used a medium grind setting for my pour over. Used bottled water ( not sure if that really makes a difference). Boiled the water and let it sit for about a minute before pouring. Bloom for about 40 seconds. And then two pours of about 100g. Used around 17g water per gram of coffee. At first I did not get the lighter notes off coconut. But after the coffee cooled down a little I could easily taste the coconutish creaminess! So good! So easy to sip! Looking forward to my next cup!

Very mild but has a definite flavor. I tend to prefer the milder coffees and love that rhey come so fresh.

Was really looking forward to having a Brazilian coffee in the mix and wasn't disappointed. As other posters have mentioned, this one tends to be a little milder - subtle and mellow. For my second brew, I changed the ratio a bit and added a tad more beans to the grind and that worked like a charm to really bring out the complexity of the flavors. The Moustache description is on point - rich and smooth with chocolate undertones and a delicious almond-like nuttiness. Really nice coffee.

I think this might be my first Brazilian...coffee from Moustache. I taste the nuttiness before and after. Very good bean. Smelled great during grind and same smell and taste post brew.

Before tasting this coffee, I always dissed Brazilian coffees. No more; this is a delightfully smooth, wonderfully fragrant, easy drinking lot of beans. Although, for me, it lacks any true upfront notes, the chocolaty body gives it a satisfying roundness, nicely balanced. Moustache coffees are always fresh, always interesting, no matter their source.

These beans produce so many fines when ground that they clog up the paper filters I use. I've tried my Baratza Virtuoso between 11 and 6 and either get big hunks with manageable fines and no flavor or out of control fines and an over-extracted taste* because it takes forever for the water to get through. I need elves to individually chop these beans or something. Maybe blow off the fines before brewing? Pour over may not be the easiest or best way to brew these guys up. * Still tastes great though!

I feel like I'm cheating or missing out on flavor if I don't drink my coffee black, particularly when it comes to the complex roasts in these subscriptions. But, since I had a hard time drinking this black, I got wild and threw in three sugar cubes with the grounds on my last pour over cup. Something magic happened - it was the missing link. I didn't need cream, or anything after that. I take my time drinking my daily cup of coffee and it was even good at room temp, later. I do recommend, particularly if you are a person who likes to add sugar to their coffee - or if you like those darker, chocolatey flavors without!

When I first ground this one, the nutty scent was very pronounced. Which didn't come across near as much in the aroma or the taste of it once brewed, though it was still present. And, more importantly, it's a great sip.

This is a mellow coffee. That is not to say the flavors are muted. They are there and present as a mild nuttiness with subtle undertones of coconut milk. I especially appreciate this coffee as one that is great to introduce the uninitiated into the world of specialty coffee.

Update: I found an old permanent filter for an automatic machine and used it as a sieve. I swished the grounds around with my fingers and a tiny amount of fines fell through. That was enough! It brewed up just fine after that and I think I got the best out of this coffee. I bumped the rating from 3 to 3.5.
