Sometimes a coffee lands in the cup that makes you stop mid-sip and say whoa. That’s Chiroso San Carlos.

Chiroso is a special Colombian variety with a fun origin story: it looks a little like an Ethiopian bean, and it tastes like one too — all bright, citrusy sparkle layered over a base of classic Colombian sweetness. It’s a local mutation of Caturra discovered in the mountains of Urrao, and it’s quickly becoming a favorite among coffee lovers for its complex, fruit-forward character.

This washed lot is a perfect showcase of what Chiroso can do. Right up front you’ll get smooth milk chocolate and caramel, the kind of flavors that make Colombian coffees so comforting. Then the cup lifts with a refreshing lemon zest brightness and a juicy tropical fruit pop — think passionfruit and sweet citrus — all tied together with a clean sugarcane sweetness. It’s vibrant, layered, and just plain fun to drink.

The farmers behind the San Carlos Project are dialing in their processing with precision: careful cherry selection, short aerobic and anaerobic fermentations, and a slow sun-dry. That attention shows up in the cup, with crisp clarity and flavor that keeps unfolding as it cools.

Bottom line? Chiroso San Carlos is both comfort and adventure in one mug — a coffee that hits the sweet, chocolatey notes you want first thing in the morning, then surprises you with bright fruit complexity that makes you linger over every sip.
