Coming to us from the lush hills of Chinchiná, Caldas, this microlot is a flavor bomb crafted by Felipe Restrepo at Jardines Chambaku, a family-run farm with nearly 40 years of coffee legacy. Felipe is a fermentation wizard and flavor chaser, and it shows in this Natural Anaerobic stunner.
The process starts with a 48-hour water immersion—a rare and meticulous step that kicks off the fermentation, followed by careful sun-drying. The result? A cup that’s bursting with dark chocolate, blackberry, cacao nibs, tangerine, and plum, all tied together with a sparkling hit of citric acidity. It’s juicy, complex, and clean—thanks to that unique pre-fermentation soak.
This is experimental coffee done right. Grown at a cool 1,900 meters and rooted in the deep passion of the Restrepo family, this is one of those brews that turns your morning ritual into something magical.
