This charming lot of natural processed coffee was grown by Robe Gelgelo on his farm, Notissa. Robe grows Ethiopian Heirloom coffee, which is a varietal derived from years of cultivating what was originally wild coffee plants in the Ethiopian highlands. Robe delivers his cherries to a mill in Dimtu owned by Gizaw Alemayu and his wife Frehiwot Mekonnen. Gizaw oversees quality, ensuring that the cherries his mill takes in are defect free and perfectly ripe. Since cherries are dried intact in the natural process, any differences in ripeness and quality will cause uneven drying and affect the clarity of flavors in the resulting coffee, so a lot of care is taken to inspect lots of coffee as they arrive. After processing, Frehiwot handles the sales and export side of the business, so make sure that producers like Robe receive the best price for their excellent coffees.
Notissa is a natural coffee, and you can tell straight away by its distinctive flavor. We love how juicy notes of cherry and some strawberry sweetness float in and out of that characteristic funk that naturals are known for, keeping this cup balanced and surprisingly sweet. We found this brew exceptionally refreshing and a great example of how versatile Ethiopian coffees can be, making great washed and natural processed coffees alike. This coffee is a great balance of sweet and fruit with a body resembling the complexities of a Kenya bean. Not so complex that you don't recognize the cup by the end. Instead it's a lightened experience that makes you refill your cup till its gone!

This is a good coffee. I like "funk" being a tasting note. Naturals are a cool break from the other processing methods because they are so distinctive.

I think this one missed the mark for me personally, but was still drinkable. I don’t mind the fruity notes, but there was definitely a flavor in the mix that didn’t work with us. I tried pour over, aero press, and my espresso machine. I generally love Ethiopian coffee, as well as many South American coffees. So, I can appreciate the differences in flavors, this just didn’t do it for me. Thanks!

Nice mix of flavors. Berry note is strong with earth and some wineish vibe. Got a hint of anise as well. French press really brings out its richness and complexity. Very enjoyable!

I get more strawberry than anything and it's super tasty. These are some of my favorite beans in a while. Probably my favorite natural process ever.

The smell of the beans was ridiculously fruity so I was expecting something very sweet. I was pleasantly surprised that the fruit notes were accompanied not by sweetness but by a nice earthy note. Things got a little more funky as I reduced my grind size and upped my extraction, but overall this ended up being an extremely smooth, tasty, not-super-complex cup of coffee. One of my favorites from Moustache so far.

Strawberry notes were especially strong. Surely a lighter cup with fruity aromas, but it's not my cup of tea (or coffee). Definitely looking forward other coffees after I finish this one
