This washed lot consists of the rare Papayo variety, so-called because the elongated shape of its cherries resemble the papaya fruit. It's an example of a re-discovered or "new" variety that is making a come back in the specialty coffee world. What is interesting aside from the cherry shape is the tasty flavor profile that is unique to this cherry. Enjoy and let me know what you think.

Perfect!
This is flavorful but delicate - my favorite combination. I do get the hints of brown sugar, tamarind, and even yellow peach - it's really delightful!
